I don't care how happy this little piece of eggplant is, it's the most boring vegetable, ever....

I used to think that way Shawn until I had too many and had to find a way of eating them.try this
Slice in half length wayssprinkle the cut side with salt and leave to sweat for 30 minsWash and dryFry the cut side in a little oil very hot to colour, flip and cook for a few minsremove from panadd chopped garlic little chopped chilli and little chopped ginger and cook for few minsAdd salt reduced soy, mirren and either soju, saki or sweet white wineBring to the boil and replace the eggplant cut side up and simmer to reduce the liquorWhen it starts getting sticky but still not too thick turn the egg plant over and continue cooking till the mass is very very thick and stickyif it burns its not a big problem as it will still be edible

Thanks Charles. The little happy eggplant was in a dish we ordered for fathers day dinner Sunday. I took the leftovers to work today. And for some reason it had a little smiley face in it. haha

Dave, I looooooove squash. acorn squash, spaghetti squash, butternut, are my favorite.

When I was really young! I was forced to eat squash that was cooked until it was mushy. It made me do the dry heaves/gag. My memory of squash to this day has not changed.
